Even though we are home more, it doesn’t necessarily mean we have more time to cook.
With homeschooling and less distraction-free space to work, my days are busier! Let’s not forget that grocery shopping isn’t as easy or safe as it once was and ingredients we took for granted, aren’t readily available anymore.
So to cut down on the mental load of food planning, I try to make 2 big meals that I can transform into multiple dinners throughout the week. If you enjoy cooking, as I do, it can become a grounding ritual to escape the daily stress. I even listen to my audiobooks & podcasts while I chop veggies!
