“Pan salad” made in the roasting pan after the chicken was pulled out to rest. Why? I have to wash that roasting pan anyway & I’m seriously anti-dishes.
This has been a great use for winter tomatoes (the disappointing evil twin of summer tomatoes) by slicing into quarters, salting lightly, and then tossing in the pan with the other veggies (cauliflower, sweet & russet potatoes, onions.) It takes 5 minutes.
After removing it from the oven just toss 2 handfuls of baby spinach leaves in to warm up at the very end. Super easy & with the pan drippings I didn’t need to make a dressing but sometimes I’ll add olive oil and a little balsamic vinegar. Completely optional. The perfect quick and healthy dish during the busy holiday season!
